You can ask him to sign:

1. Non-Disclosure & Non-Solicitation Agreement
2. Appointment Letter
3. Employee Data Form
4. Asset Handover Agreement and Form (for laptop, etc.)
5. Obtain copies of all his educational documents
6. Collect his ID and address proof
7. Obtain his passport-sized photo
8. Define policies on leave, rewards, appraisal, resignation, termination, promotions, working hours, and holidays.

I believe this should be sufficient to start with.
