It is good that you conversed with your GM and he has agreed to certify your work when you wish to change. Bur that is not enough.
Go to the GM and explain that you have served a tenure of so many days/weeks with them and that you ought to be given appointment letter with all the required details.
Tell him that it is not about switching job but that is the only proof you would have for your employment. Tell him the letter is not so that you can show it to claim better profile but to have a job security.
If suppose they management wishes to terminate you, do you have any proof of your working tenure here?
An appointment letter and a salary slip are two very much needed documents and something that an employer should not deny.
