Hi, I am working as an HR in an IT Company. Recently one of my employee took 7 days leave in the month of march as she was suffering from Typhoid. As per my company policy we allow only one leave in a month. Please let me know if we should deduct the salary of 7 days or what should be done so that the employee is not dissatisfied.

you said one leave.. which means one day leave / month or one type of leave / month.?
your company can have any policy. but see that your policies are adhered to your state shops and establishment act, esic act. an employee can avail leave for which she is eligible. if she has available earned leave. deduct from that.
deduction of salary should be the last option, when there is no accumulated leaves and unauthorised absent. but here she had typhoid and showed her medical records.
