It depends on the organizations policy! Majority of the companies, would count Sunday in your holiday, however there are exceptions.!!

Dear Rohit Singh,
The matter in question is critical and what suggested is based on normal and common practices and not on law point of view.
under what provisions of law ur org. is applying might have been considered here. whether it is under shops & comm.estt.act or factory act, then only we will came to the conclusion.
suppose ur org. is under shops/comm.esst act, then the w/off will come within and countable as a leave but when it is under the provision of factory act then all w/off's r excluded and salary/wages have to be devided by 26 or 27 or 25 or 24 whatever the days in the month, hence question doesn't arise to count the leave on w/off.
Hope this will clear ur query.

Dear Mr. Rohit,
It was really a nice question. In majority Company Policies says that the Sunday will be consider if you take a leave from Saturday to Thursday.
In this case I suggest you to take a leave from Monday to Friday.
It will serve your purpose.
