Hi You should issue salary hike letter not email. First thank the employee for the performance and then narrate the hike details. There is no fixed template for this.

Hi . . Each organization has their own style of drafting the increment letters to the employees. Some will write in detail and some just say about the revision. Some organization will send the increment letter through mail and in companies, it can be downloaded from the Portal by the individual employees. However, most of the companies, will issue physical letters.
Generally, the covering letter shall consist of the overall performance of the company during the last financial year, challenges faced, employees' cooperation, future plan and the business scenario in general for the sector. Then they will say the Management is pleased to revise your salary effective from so and so date and the details is attached herewith as an Annexure.
So you can draft a letter on your own and discuss with your boss and check whether anything to be included or modified etc. All the best.
