I want to make an agreement with my employees that once they resign, they cannot work with our clients, vendors, customers, or competitors for two years. They can work with different segments of organizations, not similar ones.

Such kinds of agreements are called "no-poach" agreements. However, there is no law by which you can bind your current employees to not join a certain employer/customer, etc., in the future. Employment bonds or bonded labor in India are not legal.
In case you ask your employees to sign such an agreement, they may do so because they want the job; however, the agreement has no legal validity. Under rare circumstances, you can only curb an employee from joining another employer of the same or different nature if there are IPR issues or if it has a direct impact on your business.
