You have provided three levels for breaking up the training module on "Business Writing Skills." However, considering the corporate environment in which software professionals work, I feel that this trifurcation may not be necessary. Keep a single module and let everybody learn from it.
Regarding pre-training, a lot of material is available on the web. They can read it and come prepared. You should prepare test exercises and start the training with them. Later, facilitate a discussion. I believe this method will help in understanding the basics of email etiquette.
For your training, you may include the following topics:
a) Difference between spoken language and written language
b) Where informal language should end and formal language should start
c) Choice of words for the subject heading
d) How to avoid a mismatch between the subject heading and the main body of the email
e) Difference between emails written to customers and internal staff members
f) Writing emails to senior officials such as Directors
g) Mail structure (most important) including rules for attachments
h) Instances when not to use email
