I had applied for a UAE employment visa with my passport number. After I got my visa, my passport got damaged, and now I have applied for the reissue of the passport. Will I be able to fly to the UAE with the new passport and the visa having the old passport number?

Passport and visa are two different things. Getting a new passport doesn't tamper with your identity. Visa with a new passport is allowed. Do carry the old passport when you travel. It sometimes differs among countries, so you may get an authorization letter requesting the passport authority for more legal backup. You may send the new passport details and your present visa details to the department that issued your visa for their consideration as an update. Also, request their reply so that you may carry it while traveling. Cross-check with the authority if they have the provision to issue a new visa accordingly.
