First thing is immediate superior along with HR boss must talk to the concerned employee to assess the reason for leaving. If the employee is good and has genuine grievance, then the organization should find out some solution to retain the employee. Reasons for leaving should be documented as exit interview for future reference and initiate any corrective action if required.

If it is otherwise, tell the employee about notice period and ask to serve the notice period if the organization thinks so. Settle S Kthe F & F with other relieving formalities.
