Letter of Appointment and up to date pay slips should be sufficient. Also give the Name and Address of the HR Dept so that the new employer can get a reference.

You can also refer your bank statement.Usually the payment deposited to the employee account is processed from the co. account.
Write an email to your head asking for the exp letter. Send reminders. Carry the copy of this letter for reference (job interview), inform that even after reminding them, they don't understand the importance of this letter. Keep a record, it would help.
