Big companies look for staff with relevant experience.
Sometimes people in smaller companies do not have the QRs as fixed by bigger companies.
One good way would be to request them to conduct a practical demonstration of your skill in the particular area you have applied for.
Show them your payslip and try to explain to HR of the practical problems.you are looking for job opportunity.
Insistence on Form 16,bank statements are internal processes of companies and no one can really ask them to overlook these basic procedures.
If I was in your place I would request them to conduct a skill demo test on software.

Hi Amit,
To join in a company...Form 16 or Bank Statement are not required,
Form 16 is required only when there is Tax Bracket and that too if your CTC is equivalent or more from your previous employer
Bank Statement .. it is personal and need not be distributed to companies
Pay Slip .. yes this is mandatory

You can request your present employer for form 16 , if they do no agree you can tell them you require it for a loan or at least get the ctc break up .
Also take a copy of self cheque whenever it is issued to you and preserve it . There are many companies in India who pay salary in cash. But big companies always ask for these things to ensure that the employment claimed is not fake.
