I have recently joined a company in a senior position which is offering me a lower salary compared to my junior colleague. Junior in the sense, she has less experience (1-2yrs) compared to me having 4 yrs experience in the same industry. The salary offered for both of us is below market standards. I feel this is a huge insult to my experience and time spent in learning the skills. Also, I didn't have bargaining power or didn't negotiate my offer better as I got laid off due to Covid and was desperately looking for a job for 6 months. What should I do? Should I discuss this issue with my manager/HR and ask for a raise? Should I seek new job opportunities?

Such temporary setbacks in career are often there, having just now agreed to accept the terms offered to you, to express displeasure over it doesn't behove well. You have got a senior position in the bargain and it is time you have to prove your worth and thereafter bargain well for what you feel is worth.
