I would suggest you two things.
First Try to collect Payroll info of respectable numbers (say at least 30-40 guys). Then you can try processing it in Excel. My suggestion is Try to configure the same in Tally.ERP9 Payroll module ( you can download and install Tally education version free of cost) and process the payroll. You have lots of youtube videos to educate you on the same. Configuring Payroll in Tally will give you enough ideas of how the processes are being done,statutory needs and forms prepared for filing etc.,
