You can take any topic in HR in which you personally are interested i.e. if you want to work in any recruitment consultancy in future then you should choose the topic of recruitment.
There are few topics which cover in itself almost every aspect of HR, they are as under:
1. Employee satisfaction
2. HR strategies
3. Performance appraisal
4. HR policies
5. International HRM
6. Stress
These all are just the name of the parameters, you have to choose it and have to make the topic
e.g.
1. Employee satisfaction in Retail industries.( You can make comparative report too, i.e. retail industry in india v/s International retail industiry or can take two different industries)
2.Impact of Stress in IT industries
There are so many topics on which you can make your project report.

If i am not wrong then HR Generalist profile contains same responsibility as HR manager. If i am wrong then any one can correct me, but what i have analysed is that HR generalist contains all responsibility Of all the HR work. So, choose that topic which include maximum factors and bases of HR, so in that way you can learn each and every aspect.

Why don't you try doing a project on Compensation and Benefit. It is interesting, but you will have to do a bit of research. For example you could take any 2 company, ie it can be 2 IT Company or Manufacturing etc and try to do a comparative study on the compensation and benefit provided by the 2 company and find which is good apart from that you could try to give your view on it as a conclusion.
Just a word of caution, try to do the study of only those companies where you can get the data.
