An interview is two way traffic.
You have to project brand image of the company by sharing relevant info to the candidate, his role responsibilities, and encourage him to ask questions and answer every question candidly .
Make him feel important and start the interview at the scheduled time.
Listen more than talk. Look for what is unsaid than said and don't get carried away by face value.

Look for candidate with required skill sets and experience.
Background check is important.
Personality and referference feed back required for the given post be checked and
evaluated.
Have focus on hiring a candidate for long term association and amicability and empathy.

There is no fixed time schedule. The time taken depends on a variety of factors like the number of posts, level of the post, mode of recruitment- only interview or written test cum interview or written test cum trade test and interview, and whether any psychological or other test is involved, etc. It is better to bench mark with the local industries of the same nature or better still the time taken in the earlier rounds of recruitment.
