It's nice to know that you are interested in SAP. One should have the process knowledge before going in for any ERP - let it be SAP or Oracle. Hence, I would recommend you to be in the HR department until such time you learn the full cycle of all HR-related processes before you enter into ERP.

It's great that you are interested in taking up SAP. However, let me tell you one thing - though you can pursue SAP HR/HCM, you need to have a minimum of 2-3 years of domain experience, and this is mandatory. Nonetheless, you can still proceed, but you may encounter difficulties in finding a job. If you choose authorized education partners, they might not allow you to enroll at this time. If you opt for unauthorized ones, they will admit you, but my suggestion is not to pursue it through unauthorized SAP channels.

If you have just 3 months of HR experience, you will not be able to do SAP-HR because HR is very vast. For that, you should have thorough knowledge of all HR functions. In SAP, they will not teach you anything about HR; they only teach you how to integrate your HR knowledge into the SAP HR module. For example, how to enable the self-appraisal link to all employees when you want to conduct self-appraisals and how to set the parameters for that. Here, they will not teach what a self-appraisal is and the different parameters involved. They assume you know that, but they will train you on how to enable the link and how to use the SAP software.
So, you need to have a total of two years of experience. Gain experience in payroll, leave management, and statutory report generation; that really helps. Avoid jobs like IT recruitment.

Is every company creating some new model based on Cloud Architecture and SAP HCM? I want to learn updated technology, not the old one which does not serve my purpose.
